Vegetable Soup

For a healthy soup, consider making a flavorful and nutritious vegetable soup. Here's a simple recipe:


Ingredients:

  • 1 onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 3 cloves garlic, minced

  • 1 sweet potato, diced

  • 1 zucchini, diced

  • 1 cup green peas

  • 1 can (14 oz) diced tomatoes

  • 6 cups vegetable broth

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper to taste

  • 2 cups spinach or kale, chopped

  • 1 tablespoon olive oil


Instructions:

1. Sauté Aromatics:

  • Heat olive oil in a large pot over medium heat. Sauté onions, carrots, celery, and garlic until softened.


2. Add Vegetables:

  • Add sweet potato, zucchini, green peas, and continue to sauté for a few minutes.


3. Season:

  • Season with dried thyme, rosemary, salt, and pepper.


4. Pour Broth:

  • Pour in the vegetable broth and diced tomatoes. Bring to a simmer.


5. Simmer:

  • Simmer for about 15-20 minutes or until the vegetables are tender.


6. Add Greens:

  • Stir in chopped spinach or kale and cook until wilted.


7. Adjust Seasoning:

  • Taste and adjust seasoning if needed.


8. Serve:

  • Ladle the soup into bowls and serve warm.
